We asked Hemsley + Hemsley to share their top tips and recipes for a healthy family picnic. This baked rework of traditional fried chicken, Pablo’s Chicken, is perfect family finger food and the spice mix is easily adjustable for younger kids.

Pablo’s Chicken is one of our absolute favourite picnic recipes. It’s perfect for eating with your fingers! Baked in our homemade spice mix with a crisp, nutty crust, this succulent chicken dish is perfect served hot or cold and it’s ideal for fried chicken fans. We love to serve it with probiotic ketchup, Thai sweet chilli sauce or just a squeeze of lemon and either summer lime coleslaw or our quicker-than-toast courgette salad.

Serves 4

For the chicken                                           

  • 180g ground almonds, or use “Sun Flour” (ground sunflower seeds)
  • 2 eggs
  • 6 pieces of chicken (use a mix of drumsticks and thighs), skin on
  • 1 tablespoon of ghee
  • Sea salt and black pepper

For the spice mix 

Note: You can reduce the spices to suit smaller children

  • 3 teaspoons of hot smoked paprika or 2½ teaspoons of smoked sweet paprika with ½ teaspoon of cayenne pepper
  • 1½ teaspoon of ground cumin
  • 1½ teaspoon of sea salt
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • ¾ teaspoon of onion powder (optional)
  • ¾ teaspoon of garlic powder (optional)


  1. Preheat the oven to fan 180°C/Gas mark 6 and line a baking tray with baking parchment.
  2. Mix the ground almonds and ingredients for the spice mix in a bowl. In a second bowl, beat the eggs.
  3. Dip the chicken pieces, one at a time, in the egg, then coat in the mix of ground almonds and spices and lay on the baking tray.
  4. Gently heat the ghee and use a spoon to drizzle it over the pieces.
  5. Bake for 45 minutes until golden and sprinkle with some sea salt and pepper.
